Lemon Almond Risotto
Ingredients: basmati rice 92%, almonds 7.6%, parsley, turmeric, lemon essence.
This serves perfect with asparagus as a side dish. As a main course for two people, sufficient as a side dish for four people.
Preparation: Braise the rice in olive oil and simmer gently in 400ml vegetable stock or coconut milk for 20 minutes. Served with a little butter and a dash of lemon juice, this mix of basmati rice, almonds and lemon essence is the ideal accompaniment to all fish dishes.
