Pan Seared Dates w/ Vanilla Ice Cream
Heat 1 Tbsp. oil in a medium skillet over medium.
Add dates and cook, turning often, until lightly browned on all sides, 4–6 minutes.
Divide dates among plates.
Add a few small scoops of ice cream to each.
Drizzle with pumpkin seed oil, then top with mint;
Season with sea salt
