Cut off one-third of the cucumber and set aside. Thinly slice the remaining cucumber and place half in a pitcher along with mint; gently muddle to release cucumber’s juices.
Stir in the gin, lime juice, and elderflower liqueur, then add the sparkling wine, remaining sliced cucumber and half of the sliced limes.
Using a vegetable peeler, shave the reserved cucumber lengthwise into ribbons. Roll into spirals and secure with toothpicks.
Serve spritz over ice with remaining lime slices and cucumber spirals.
